Mississippi Mud Cake


Cake:
2 cups sugar
1 cup shortening
4 eggs
1 1/2 cups flour
1/2 cup cocoa
1/4 teaspoon salt
1 teaspoon vanilla
1 cup coconut
1 cup nuts

Bake in cookie sheet at 300 degrees for 40 to 45 minutes. Spread marshmallows on tops as soon as removed from from oven. Spread icing on while hot.

Icing:
1 pound powdered sugar
1/3 cup cocoa
1/4 pound oleo, melted
1/2 cup milk
1 cup nuts

Melt oleo, add cocoa, milk and powdered sugar. Spread on cake while still hot. Sprinkle with nuts.

Banana Nut Cake


Banana Nut Cake

Sift together in Bowl:
2 1/2 cups cake flour
1 2/3 cups sugar
1 1/4 teaspoons baking powder
1 1/4 teaspoons soda
1 teaspoon salt

Add:
2/3 cup shortening
1/3 cup buttermilk
1 1/4 cups mashed bananas (about 3)

Beat vigorously for 2 minutes then Add:
1/3 cup buttermilk
2 eggs, unbeaten

Beat 2 minutes. Fold In:
2/3 cup chopped nuts

Pour batter into 2 round 9 x 1 1/2 inch prepared pans. Bake at 350 degrees for 30 to 35 minutes.

Cinnamon Rolls


Cinnamon Rolls


Soften:
1 package yeast
1 cup scalded milk, cool to lukewarm, add yeast

Add: 
1/4 cup white sugar
1 cup flour

When cool add: 
1 teaspoon salt
2 beaten eggs
1/4 cup melted butter
1 1/2 cups flour

Mix well and let rise. Roll out and spread with 1/4 cup brown sugar and 1 teaspoon cinnamon. Bake at 425 degrees for 8 to 10 minutes.

Boston Cream Pie


Boston Cream Pie

1 box yellow cake mix
2 boxes vanilla instant pudding

Frosting:
1 cup Nestles Quik
1/2 cup boiling water
2 1/4 cups powdered sugar
1/4 cup oleo

Melt oleo in boiling water and Nestles Quik. Add powdered sugar and spread over cake.

Spiced Apple Cake


Spiced Apple Cake

Sift:
1 cup brown sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon soda

Add:
1/2 cup shortening to make crumbs

Then Add:
1 egg
1/2 cup milk
1 teaspoon vanilla

Mix well. Add 4 or 5 diced apples. Pour into well greased pan.

Topping:
3 tablespoons melted butter
1 cup brown sugar
1/2 cup flour
1 teaspoon cinnamon
1 cup chopped nuts

Spread over the top and bake at 350 degrees for 45 minutes.

Peanut Butter Squares


Peanut Butter Squares

1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 cup oleo or butter
1/3 cup peanut butter
1 cup flour
1 cup quick oats
1/2 teaspoon soda
1/4 teaspoon salt

Cream sugars, oleo or butter and peanut butter, then add remaining ingredients. Bake at 350 degrees until golden brown. Bake in cookie sheet.

Peanut Butter Frosting:
1 1/2 cups powdered sugar
1/4 cup peanut butter
2 tablespoons milk

Reserve 1/3 cup of peanut butter frosting, Mix with 3 tablespoons of cocoa and 1 tablespoon of milk. Spread both frostings on cookies. Cut in bars.

Chocolate Chip Cookies


Chocolate Chip Cookies

1 cup soft shortening
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
8 ounce package chocolate chips
2 3/4 cups sifted flour
1/2 teaspoon soda
1 teaspoon salt
1 1/2 teaspoons vanilla

Mix sugar, shortening and beaten eggs together. Add flour, soda and salt. Last add vanilla and chocolate chips. Bake at 400 degrees.

Fudge Brownies


Fudge Brownies

1 1/2 cups Bisquick
1/2 cup white sugar
1/2-1 cup chopped nuts
1/2 cup milk
1/2 cup brown sugar (packed)
1 3/4 cup boiling water
3 tablespoons cocoa

Mix together. Bake at 350 degrees in a 9 x 13 inch pan. Serve warm with ice cream.

Chocolate Mocha Pie


Chocolate Mocha Pie

Dissolve 1 tablespoon of gelatin in 1/4 cup cold water.

Combine in Saucepan:
1 tablespoon cocoa
1 teaspoon coffee
1/8 teaspoon salt
1 teaspoon vanilla
3/4 cup sugar
1 1/4 cups milk
1 cup cream

Mix together cocoa, coffee, salt, sugar and milk. Bring to a boil, stirring constantly. Remove from heat and add the gelatin. Cool until slightly thickened. Beat the cooked mixture until smooth. Beat the cream. Pour into a 9 inch baked pie shell and top with nuts.

Vanilla Crumb Pie


Vanilla Crumb Pie

1/2 cup brown sugar (packed)
1 tablespoon flour
1/4 cup light Karo syrup
1 1/2 teaspoons vanilla
1 cup water
1 egg, beaten

Cook this over medium heat, stirring until mixture comes to a boil. let cool.

1 cup flour
1/2 cup brown sugar (packed)
1/2 teaspoon cream of tartar
1/2 teaspoon soda
1/8 teaspoon salt
1/4 cup butter

Mix this until crumbly. Pour cooled mixture into pie shell. Top with crumbs. Bake at 350 degrees for 40 minutes or until golden brown.
